Approximately 50/50 Chardonnay and Pinot Noir from mostly 2021, with 25% Barrel Fermented Chardonnay from 2020. Unwooded components harvested in January 2021. 14 days alcoholic fermentation, racked off the lees before blending, all racking done under CO² with minimal sulphur additions.
Wooded component harvested in January 2020 fermented in 600L Austrian Oak (Stockinger Barrels) and aged for a further 12 months.
After blending all components, wine is cold stabilized at -3ºC for 2-3 weeks. Sugar & specialized yeast is added for tirage, followed by 30 months on the lees before degorgement.
